This Overnight Cinnamon Apple Baked French Toast Casserole is the perfect make-ahead breakfast. Loaded with spiced apples, buttery bread cubes, and a rich cinnamon-vanilla custard, it bakes into a warm, cozy morning treat.

  • 1 loaf French bread (1416 oz), cut into 1-inch cubes
  • 6 large eggs
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 teaspoons vanilla extract
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 large apples (Granny Smith or Honeycrisp), peeled and diced
  • 2 tablespoons butter
  • 1/2 cup flour
  • 1/2 cup packed brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 cup cold butter, cubed

Instructions

  1. Grease a 9×13-inch baking dish and spread cubed bread evenly across the bottom.
  2. In a skillet over medium heat, melt butter and sauté diced apples with a sprinkle of cinnamon for 5–7 minutes until just tender. Spread over the bread.
  3. In a large bowl, whisk together eggs, milk, cream, granulated sugar, brown sugar, vanilla, cinnamon, and nutmeg. Pour evenly over the bread and apples, pressing lightly so bread absorbs custard.
  4. Mix flour, brown sugar, cinnamon, and cold butter until crumbly. Refrigerate separately.
  5. Cover casserole tightly and refrigerate overnight.
  6. In the morning, preheat oven to 350°F (175°C). Let casserole rest at room temp for 20–30 minutes. Sprinkle streusel on top.
  7. Bake uncovered for 45–50 minutes or until golden and set.
  8. Cool for 10 minutes before slicing. Serve with syrup, powdered sugar, or whipped cream.
