Savory Pesto Chicken Delight Sandwich is a warm, crispy sourdough sandwich layered with juicy chicken, vibrant basil pesto, and perfectly melted cheese.

  • 8 slices sourdough bread
  • 2 cups (300 g) cooked chicken breast, sliced or shredded
  • 1/2 cup (120 g) basil pesto
  • 1 1/2 cups (150 g) shredded mozzarella or sliced provolone
  • 2 tablespoons (28 g) unsalted butter, softened
  • 1 medium tomato, sliced (optional)
  • Salt and black pepper to taste

Instructions

  1. Spread softened butter on one side of each slice of sourdough bread.
  2. Spread pesto evenly on the unbuttered sides of the bread.
  3. Add chicken evenly over four slices, season lightly with salt and pepper, then top with cheese and optional tomato slices.
  4. Place remaining bread slices on top, buttered side facing outward.
  5. Cook in a skillet over medium heat for 3–4 minutes per side until golden brown and cheese is melted. Press gently for even browning.
  6. Let sandwiches rest briefly before slicing and serving.
