  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 lb sirloin steak, thinly sliced
  • 8 cups beef broth
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 tsp Worcestershire sauce
  • 1/2 tsp dried thyme
  • 1/4 tsp red pepper flakes (optional)
  • Salt and black pepper to taste
  • 4 tbsp butter
  • 4 tbsp all-purpose flour
  • 3 cups milk
  • 8 oz cream cheese, softened

Instructions

  1. Chop the onion, green bell pepper, and red bell pepper. Thinly slice the sirloin steak against the grain. Gather all remaining ingredients.
  2. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and bell peppers. Sauté for 5-7 minutes until softened. Remove and set aside.
  3. Increase heat to medium-high. Add thinly sliced sirloin steak to the hot pot (add more oil if needed). Sear quickly until browned, about 2-3 minutes per side. Remove steak and set aside.
  4. Reduce heat to medium. Add 4 tablespoons of butter to the pot. Once melted, stir in 4 tablespoons of all-purpose flour. Cook, stirring constantly, for 1 minute.
  5. Gradually whisk in 8 cups of beef broth and 3 cups of milk until smooth. Stir in diced tomatoes, Worcestershire, thyme, and red pepper flakes (if using). Season with salt and pepper. Bring to a gentle simmer.
  6. Reduce heat to low. Add the 8 ounces of softened cream cheese (cubed) to the soup. Stir continuously until completely melted and smooth.
  7. Return the seared steak and sautéed vegetables to the pot. Stir gently to combine. Simmer on low heat for 5-10 minutes for flavors to meld. Do not boil.
  8. Ladle the hot soup into bowls. Serve immediately, with crusty bread for dipping, if desired. Enjoy!
