- ½ tsp baking soda
- ½ tsp salt
- 1 cup unsalted butter, cold and cubed
- ¾ cup granulated sugar
- ¾ cup light brown sugar, packed
- 2 large eggs
- 1 tsp vanilla extract
- 1½ tsp strawberry extract
- Pink or red gel food coloring (optional)
- 1 cup white chocolate chips
- 8 oz cream cheese, softened
- ¼ cup powdered sugar
- ½ tsp vanilla extract
- Mix cream cheese, powdered sugar, and vanilla until smooth. Scoop 1 tsp portions onto parchment and freeze 30–45 minutes until firm.
- In a bowl, whisk flour, baking soda, and salt.
- Beat butter with granulated and brown sugar until fluffy. Add eggs, vanilla, and strawberry extract.
- Mix in gel food coloring until desired pink shade is reached.
- Gradually add dry ingredients to wet. Fold in white chocolate chips.
- Flatten a scoop of dough, place frozen cheesecake filling in center, wrap dough around, and roll into a ball.
- Bake at 350°F (175°C) for 12–14 minutes until edges are set. Cool 5 minutes before transferring to rack.
