Irresistibly Sweet Pink Strawberry Cheesecake Cookies – A Perfect Valentine’s Treat

  • 2½ cups all-purpose flour
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup unsalted butter, cold and cubed
  • ¾ cup granulated sugar
  • ¾ cup light brown sugar, packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1½ tsp strawberry extract
  • Pink or red gel food coloring (optional)
  • 1 cup white chocolate chips
  • 8 oz cream cheese, softened
  • ¼ cup powdered sugar
  • ½ tsp vanilla extract

Instructions

  1. Mix cream cheese, powdered sugar, and vanilla until smooth. Scoop 1 tsp portions onto parchment and freeze 30–45 minutes until firm.
  2. In a bowl, whisk flour, baking soda, and salt.
  3. Beat butter with granulated and brown sugar until fluffy. Add eggs, vanilla, and strawberry extract.
  4. Mix in gel food coloring until desired pink shade is reached.
  5. Gradually add dry ingredients to wet. Fold in white chocolate chips.
  6. Flatten a scoop of dough, place frozen cheesecake filling in center, wrap dough around, and roll into a ball.
  7. Bake at 350°F (175°C) for 12–14 minutes until edges are set. Cool 5 minutes before transferring to rack.
