  • 1 pound Ground Beef (or ground turkey or plant-based option)
  • 1 packet Taco Seasoning (or homemade seasoning)
  • 1/2 cup Water (or beef broth for added flavor)
  • 1 can Black Beans (or kidney beans or lentils)
  • 1 cup Corn Kernels (frozen, thawed before use)
  • 1 medium Diced Red Onion (or green onions)
  • 1 medium Diced Bell Pepper (any color)
  • 1 cup Diced Tomatoes (or canned tomatoes)
  • 1 cup Shredded Cheddar Cheese (or Monterey Jack or omit for dairy-free)
  • 1/2 cup Sour Cream (or Greek yogurt)
  • 1/4 cup Chopped Cilantro (or omit)
  • 2 wedges Lime (or lemon for a different flavor)
  • 1 cup Salsa (any preferred type)

Instructions

  1. Begin by heating a large skillet over medium heat. Add olive oil to the pan and allow it to warm for about 30 seconds.
  2. Add the ground beef to the skillet, breaking it apart. Cook for 7-10 minutes, stirring until browned. Drain excess fat if necessary.
  3. Stir in taco seasoning and water, mixing well. Let it simmer on low heat for 5 minutes to thicken the sauce.
  4. Warm the cooked rice separately, either on the stove or in the microwave, for about 5 minutes.
  5. In another pan, warm the corn kernels over medium heat for about 3-4 minutes, stirring gently.
  6. Add diced red onion and bell pepper to the corn mixture, and sauté together for 4-5 minutes until tender.
  7. Assemble your burrito bowl starting with rice, then add beef, sautéed veggies, black beans, shredded cheese, and sour cream. Top with cilantro, lime, and salsa.
