  • 34 lbs (68 medium) fresh sweet potatoes
  • ½ cup (1 stick) unsalted butter, melted
  • ½ cup granulated sugar
  • ¼ cup packed light brown sugar
  • ¼ cup whole milk or half-and-half
  • 2 large eggs, lightly beaten
  • 1 tsp pure vanilla extract
  • ½ tsp fine sea salt
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ⅛ tsp ground cloves (optional)
  • ½ cup all-purpose flour
  • ½ cup packed light brown sugar
  • ½ cup (1 stick) unsalted butter, cold and cubed
  • 1 cup chopped pecans
  • ⅛ tsp fine sea salt
  • ¼ tsp ground cinnamon (optional)

Instructions

  1. Roast sweet potatoes at 400°F (200°C) for 45-60 min until tender. Alternatively, peel and boil/steam chunks for 15-20 min until tender. Cool slightly, then remove skins if roasted.
  2. Mash cooked sweet potatoes until smooth. While warm, add ½ cup melted butter, ½ cup granulated sugar, ¼ cup packed light brown sugar, ¼ cup milk/half-and-half, and 2 beaten eggs. Stir in 1 tsp vanilla extract, ½ tsp sea salt, ½ tsp ground cinnamon, ¼ tsp ground nutmeg, and optional ⅛ tsp ground cloves. Mix thoroughly until smooth and uniform. Adjust sweetness/spices to taste.
  3. In a separate bowl, whisk together ½ cup all-purpose flour, ½ cup packed light brown sugar, and ⅛ tsp sea salt (plus optional ¼ tsp ground cinnamon). Cut in ½ cup cold, cubed unsalted butter using fingertips or a pastry blender until mixture resembles coarse crumbs. Fold in 1 cup chopped pecans.
  4. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish. Spoon the sweet potato mixture evenly into the dish. Generously sprinkle the pecan topping over the sweet potato base.
  5. Bake for 30-40 minutes, until the casserole bubbles around the edges and the topping is golden brown. If topping browns too quickly, tent with foil. Let rest 10-15 minutes before serving warm. Enjoy!
