- Preheat your oven to 200°C (400°F).
- In a bowl, mix together the cream cheese, chopped herbs, and diced salmon. Add a pinch of salt and pepper to taste. Set this aside.
- On a lightly floured surface, roll out your puff pastry to about 3mm thickness.
- Using a star-shaped cookie cutter, cut out star shapes from the pastry, ensuring you cut an even number.
- Place half of the star shapes on a baking sheet lined with parchment paper. Spoon a small amount of the salmon filling into the center of each star.
- Place the remaining star shapes on top of the filled ones. Press the edges gently to seal them.
- Beat an egg and brush it over the tops of the stars for a golden finish.
- Bake the pastries in the preheated oven for about 15-20 minutes, or until they’re puffed and golden brown.
- Once baked, let them cool slightly before serving.
