  • 2 tablespoons Butter
  • 2 medium Onions, thinly sliced
  • 1 teaspoon Salt
  • Optional: 2 tablespoons Coconut Oil, 1 teaspoon Chili Flakes, 1/4 cup Fresh Herbs, 1/4 cup Toasted Nuts, 1/4 cup Dried Fruits

Instructions

  1. Thinly slice two medium onions and set aside.
  2. Melt 2 tablespoons of butter in a large skillet over medium heat.
  3. Add the sliced onions to the skillet and caramelize them for 15-20 minutes until golden brown, stirring frequently.
  4. Add 1 cup of rinsed white rice to the skillet and stir to coat the grains with the onion and butter mixture. Cook for 2-3 minutes.
  5. Pour in 2 cups of water or vegetable stock and bring to a boil.
  6. Reduce heat to low, cover the skillet, and simmer for 15-20 minutes until the liquid is absorbed and the rice is tender.
  7. Remove from heat and let the rice rest for 5 minutes.
  8. Gently fluff the rice with a fork before serving.
