Ritz Cracker Salted Caramel Icebox Cake is a decadent no-bake dessert layered with buttery crackers, fluffy whipped cream, and rich salted caramel.

Ingredients

  • 2 sleeves Ritz crackers (about 60 crackers / 300 g)
  • 2 cups heavy whipping cream (480 ml)
  • 1/4 cup powdered sugar (30 g)
  • 1 teaspoon pure vanilla extract (5 ml)
  • 1 cup thick salted caramel sauce (240 ml)
  • 1/2 teaspoon flaky sea salt (optional topping)
  • 2 ripe bananas, sliced
  • 1/4 cup chopped nuts (30 g)
  • Extra caramel drizzle

Instructions

  1. In a chilled bowl, beat heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  2. Arrange a single layer of Ritz crackers in the bottom of an 8×8-inch or 9×9-inch dish, breaking crackers as needed to cover the base.
  3. Spread a layer of whipped cream over the crackers, then drizzle salted caramel evenly on top.
  4. Continue layering crackers, whipped cream, and caramel until ingredients are used, finishing with whipped cream on top.
  5. Cover tightly and refrigerate for at least 6 hours, preferably overnight, until softened and fully set.
  6. Slice into squares, drizzle with extra caramel, and sprinkle lightly with flaky sea salt if desired.
