  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup freshly grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease with olive oil.
  2. In a bowl, toss carrots with olive oil, minced garlic, salt, and pepper. Spread evenly on the baking sheet in a single layer.
  3. Roast for 25–30 minutes, flipping halfway through, until tender and lightly browned on the edges.
  4. Sprinkle Parmesan cheese over the carrots and roast for an additional 5 minutes until melted and golden.
