A healthy and flavorful bowl packed with roasted vegetables and creamy hummus. Perfect for a quick lunch or light dinner.

Ingredients

  • 1 cup chickpeas, drained and rinsed
  • 1 red bell pepper, sliced
  • 1 zucchini, chopped
  • 1 small sweet potato, diced
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 cup hummus
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss chickpeas, bell pepper, zucchini, and sweet potato with olive oil, salt, pepper, and paprika.
  3. Spread vegetables on a baking sheet and roast for 25-30 minutes until tender.
  4. Spread hummus in a bowl and top with roasted vegetables.
  5. Garnish with parsley and feta cheese if desired.
  6. Serve warm.

  • Substitute any vegetables of your choice.
  • Store leftovers in an airtight container for up to 2 days.
