4 large flour tortillas
1½ cups shredded mozzarella or cheddar cheese
½ cup cooked chicken or beans (optional)
1 tablespoon butter or olive oil (for cooking)
Spinach for green filling
Sliced bell peppers
Cooked ground turkey
Avocado slices
Instructions
Lay one tortilla flat. Sprinkle cheese evenly over half. Add optional fillings if desired. Fold into a half-moon shape.
Heat a skillet over medium heat. Add butter or oil. Cook for 2–3 minutes per side until golden brown and cheese is melted. Allow to cool slightly.
Use a shamrock-shaped cookie cutter to press out shapes. If cutting by hand, carefully carve three connected circles at the top and a small stem at the bottom.
Arrange on a platter and serve warm with salsa, guacamole, or yogurt dip.
