Ingredients
Scale
1 pound peeled and deveined shrimp
1 bunch asparagus, cut into 2-inch pieces
8 ounces shiitake or button mushrooms, sliced
3 tablespoons soy sauce (or tamari for gluten-free)
1 tablespoon oyster sauce (optional)
1 tablespoon sesame oil
2 cloves garlic, minced
1 tablespoon fresh ginger, grated
2 tablespoons vegetable oil
Salt, to taste
Pepper, to taste
2 cups cooked rice or noodles, for serving
Instructions
Prepare the shrimp, asparagus, and mushrooms: peel and devein shrimp, cut asparagus into 2-inch pieces, and slice mushrooms.
Marinate shrimp with 1 tablespoon soy sauce and a pinch of salt for 10 minutes.
Heat vegetable oil in a large skillet or wok over medium-high heat.
Sauté minced garlic and grated ginger for 30 seconds until fragrant.
Add marinated shrimp and cook until pink and opaque, about 2-3 minutes.
Stir in asparagus and mushrooms, cook for 3-5 minutes until tender-crisp.
Pour in remaining soy sauce and optional oyster sauce, stir, and cook for 1 minute.
Season with salt and pepper to taste.
Drizzle sesame oil over the stir-fry and mix well.
Serve hot over cooked rice or noodles.
Notes
Cook shrimp until just pink and opaque to avoid a rubbery texture.
Prepare all ingredients before cooking for a smooth process.
Use medium-high heat for best flavor.
Feel free to add other vegetables like bell peppers or snap peas.
