  • ½ cup all-purpose flour (66g)
  • ½ teaspoon salt
  • 1 teaspoon pepper
  • ½ teaspoon garlic powder
  • 12 ounces mushrooms, cleaned and thick sliced
  • 4 tablespoons unsalted butter, divided
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 2 large shallots, sliced thin
  • ½ cup non-alcoholic white wine alternative
  • 1 ½ cups low-sodium chicken broth
  • ½ cup heavy cream
  • 2 large sprigs of fresh thyme
  • 1 teaspoon Dijon mustard

Instructions

  1. Pat chicken cutlets dry. In a shallow bowl, combine flour, salt, pepper, and garlic powder. Dredge chicken, shaking off excess.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken cutlets 3-4 minutes per side until golden; remove and set aside.
  3. Add 1 tbsp butter to skillet. Sauté mushrooms until browned. Add remaining butter, shallots, and minced garlic; cook until fragrant. Stir to combine.
  4. Pour in non-alcoholic white wine alternative, scraping up browned bits. Simmer 2 minutes. Stir in chicken broth, heavy cream, fresh thyme, and Dijon mustard. Bring to a simmer.
  5. Return chicken to the skillet. Reduce heat to low, cover, and simmer 8-10 minutes, or until chicken is cooked through (165°F/74°C).
  6. Remove chicken. Simmer sauce uncovered 2-3 minutes to thicken. Adjust seasoning. Spoon sauce over chicken; garnish with fresh thyme and serve.
