Cozy Slow Cooker Beef and Lentil Stew for Heartwarming Nights

  • 2 pounds Beef Stew Meat
  • 1 cup Dried Lentils
  • 1 medium Onion
  • 2 medium Carrots
  • 2 stalks Celery
  • 3 cloves Garlic
  • 1 14 oz can Diced Tomatoes
  • 4 cups Beef or Chicken Broth
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Dried Thyme
  • 1 leaf Bay Leaf
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper

Instructions

  1. Prep your ingredients: Dice the onion, peel and chop the carrots, and mince the garlic. Cut the beef into bite-sized pieces.
  2. Sear the beef in a skillet over medium-high heat for about 5 minutes, until browned on all sides. Transfer to the slow cooker.
  3. Load the slow cooker with the seared beef (or raw), lentils, onion, carrots, celery, and garlic. Add diced tomatoes and broth.
  4. Stir in smoked paprika, cumin, and thyme. Mix to combine.
  5. Cover and cook on low for 8 to 10 hours or high for 4 to 6 hours until beef is tender.
  6. Taste and adjust seasoning before serving. Remove the bay leaf.
  7. Serve in bowls and enjoy with crusty bread or salad.

  • Consider using ground beef for a different flavor profile.
  • Green or brown lentils work best.
  • Feel free to use fresh thyme.
