Enjoy effortless comfort meals with this savory Slow Cooker Beef Manhattan. Tender chuck roast is slow-cooked in a rich gravy and served over creamy mashed potatoes.

Ingredients

Scale
  • 2 pounds Beef Chuck Roast (can substitute with beef stew meat or bottom round roast)
  • 1/4 cup Apple Cider Vinegar (white vinegar or beef broth can be used as alternatives)
  • 1 packet Onion Soup Mix (a homemade onion blend can be a great substitute)
  • 1 packet Brown Gravy Mix (consider making a homemade version using beef drippings)
  • 4 cups Prepared Mashed Potatoes (scratch-made provides a fresher flavor, while instant saves time)
  • 1 loaf Garlic Bread (store-bought or homemade for an added personal touch)

Instructions

  1. Cut the beef chuck roast into 2-3 inch chunks and place them in the slow cooker.
  2. Sprinkle the onion soup mix and brown gravy mix evenly over the beef.
  3. Pour the apple cider vinegar over the seasoned beef.
  4. Cover the slow cooker and cook on LOW for 6-8 hours or HIGH for 3-4 hours.
  5. About 30 minutes before serving, prepare the sides: cook the mashed potatoes according to package instructions or your favorite recipe, and warm the garlic bread in the oven.
  6. Plate the tender beef and its savory gravy over a generous serving of creamy mashed potatoes and serve with warm garlic bread.

Notes

  • For a thicker gravy, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir into the slow cooker during the last 30 minutes of cooking.
  • Resist lifting the slow cooker lid during cooking to maintain an even temperature.
  • For better flavor, use fresh ingredients whenever possible.
