1 lb Ground Beef (80/20 blend)
1 cup Cheddar Cheese
1 cup American Cheese
4 Flour Tortillas
Mayonnaise (to taste)
Ketchup (to taste)
Mustard (to taste)
1 Onion (chopped)
Dill Pickles (sliced)
Oil (for cooking)
Salt (to taste)
Pepper (to taste)
Instructions
In a skillet over medium-high heat, add a tablespoon of oil. Once hot, add your ground beef. Season with salt and pepper, then smash down the beef with a spatula to create thin patties. Cook until browned and crispy, about 3-4 minutes per side. Remove from the skillet and set aside.
In the same skillet, add a bit more oil if needed and toss in the chopped onions. Cook them until they are translucent and caramelized, about 5-7 minutes.
On one half of a tortilla, layer some cheese, a beef patty, sautéed onions, pickles, and a drizzle of your preferred condiments. Top with more cheese and fold the tortilla over to create a half-moon shape.
Wipe the skillet clean and return it to medium heat. Add a small amount of oil and carefully place the folded quesadilla in the skillet. Cook for about 3-4 minutes on each side until the tortilla is golden brown and the cheese has melted. Repeat with remaining tortillas.
Once cooked, remove the quesadillas from the skillet and let them rest for a minute. Slice into wedges and serve with extra condiments on the side.
