  • 1/4 teaspoon cayenne pepper (optional)
  • 1/4 cup nutritional yeast (optional)

Instructions

  1. Thoroughly wash the broccoli head under cold running water, cleaning between florets. Cut into roughly 1-1.5 inch florets.
  2. Steam florets for 5-7 minutes, or until tender-crisp but still holding their shape. Immediately transfer to a colander to drain excess moisture. Let cool slightly.
  3. Using a potato masher, gently smash florets to a slightly flattened, irregular shape. Work in batches to avoid overcrowding. Do not over-smash.
  4. In a large bowl, whisk together olive oil, garlic powder, onion powder, paprika, salt, pepper, and cayenne pepper (if using). Add smashed broccoli and toss to coat evenly. Add nutritional yeast (if using) and toss again.
  5. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Arrange broccoli florets in a single layer on the baking sheet. Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
  6. Let chips cool completely on the baking sheet before transferring to an airtight container. Store at room temperature for up to 3 days, or in the refrigerator for up to a week.
