1 lb thinly sliced beef ribeye or sirloin
1/3 cup kimchi, chopped
2 tbsp soy sauce
1 tbsp sesame oil
2 cloves garlic, minced
1 tbsp brown sugar
1/2 small onion, sliced
1/2 bell pepper, sliced (optional)
4 hoagie rolls or baguette sections
4 slices provolone or mozzarella cheese
1 tbsp butter or oil, for cooking
Instructions
Mix soy sauce, sesame oil, garlic, and brown sugar. Add beef and marinate at least 30 minutes.
Heat oil in a skillet over medium-high heat. Cook beef until browned and caramelized. Add onion and bell pepper if using.
In a separate pan, lightly sauté kimchi until warm and fragrant.
Fill hoagie rolls with bulgogi, top with kimchi and cheese.
