These Sticky BBQ Chicken Zucchini Boats are a delicious and healthy twist on a classic. Tender roasted zucchini halves are filled with juicy shredded chicken coated in a tangy BBQ sauce, then topped with melted cheese and fresh herbs. They are perfect for a weeknight dinner, a light lunch, or a crowd-pleasing appetizer.

  • 4 medium zucchinis
  • 2 cups cooked shredded chicken
  • 1 cup BBQ sauce (sticky blend preferred)
  • 1 tablespoon olive oil
  • 1/2 cup shredded cheddar or mozzarella cheese
  • 2 tablespoons chopped green onions
  • 2 tablespoons chopped fresh cilantro or parsley
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and slice the zucchinis in half lengthwise. Scoop out the seeds and some of the flesh to create a hollow center, leaving about a 1/4-inch border for structure.
  3. Place the zucchini halves in a baking dish. Drizzle with olive oil and season with salt and pepper.
  4. Roast the zucchini shells for 12-15 minutes, or until slightly tender.
  5. While the zucchini roasts, combine the shredded chicken with 3/4 cup of BBQ sauce in a mixing bowl. Stir until the chicken is evenly coated.
  6. Spoon the BBQ chicken mixture into each roasted zucchini half, packing it gently.
  7. Top the filled zucchini boats with shredded cheese.
  8. Return the zucchini boats to the oven and bake for another 10-12 minutes, or until the cheese is melted and bubbly.
  9. Remove from the oven, garnish with chopped green onions and cilantro or parsley. Drizzle with extra BBQ sauce if desired.
  10. Serve warm.

  • Choose medium-sized zucchinis for best results, as larger ones can become watery.
  • Do not over-scoop the zucchini flesh; leave enough for the shells to hold their shape.
