Irresistible Strawberry Crunch Cheesecake: A No-Bake Summer Dessert Favorite

  • 2 cups Golden Oreo cookies, finely crushed
  • 5 tbsp unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream, cold
  • 1 (3 oz) box strawberry gelatin (Jello)
  • 1 cup Golden Oreos, crushed (for topping)
  • 1 cup freeze-dried strawberries, crushed
  • 2 tbsp unsalted butter, melted (for topping)
  • 1 cup whipped topping or stabilized whipped cream (optional)

Instructions

  1. Mix crushed Golden Oreos with melted butter. Press firmly into a 9-inch springform pan and freeze 15 minutes.
  2. Beat cream cheese until smooth. Add powdered sugar, vanilla, and strawberry gelatin; mix well.
  3. In a separate bowl, whip heavy cream to stiff peaks and gently fold into cheesecake mixture.
  4. Spread filling evenly over chilled crust. Smooth the top.
  5. Refrigerate at least 6 hours or overnight until fully set.
  6. Combine crushed Oreos, freeze-dried strawberries, and melted butter.
  7. Add optional whipped topping layer, sprinkle crunch topping, slice, and serve cold.
