  • 2 cups cooked chicken (shredded or chopped)
  • 1/4 cup sun-dried tomatoes (roughly chopped)
  • 1/4 cup red onion (finely chopped)
  • 1/4 cup celery (diced)
  • 1/4 cup mayonnaise (or Greek yogurt for a lighter version)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh parsley (chopped)
  • Salt and pepper to taste
  • 1/4 cup toasted almonds or walnuts (for added crunch)
  • 1/4 cup feta cheese (crumbled)
  • 1 tablespoon balsamic vinegar (for extra tang)

Instructions

  1. Cook and shred or chop the chicken. Leftover chicken or rotisserie chicken works well for this dish.
  2. Finely chop the sun-dried tomatoes, red onion, and celery. Add them to a mixing bowl with the chicken.
  3. In a small bowl, mix together mayonnaise (or Greek yogurt), Dijon mustard, and fresh parsley. Season with salt and pepper to taste. Add balsamic vinegar for extra tang if desired.
  4. Add the dressing to the chicken and vegetables and toss gently to coat. Adjust seasoning with salt, pepper, or mustard as needed.
