A romantic sushi recipe perfect for Valentine’s Day.

Ingredients

  • 2 1/2 cups water
  • 1/2 cup rice vinegar
  • 1/4 cup sugar
  • 1 teaspoon salt
  • 4 sheets nori
  • 1 cucumber, julienned
  • 1 avocado, sliced
  • 8 ounces raw fish (like salmon or tuna), thinly sliced
  • Soy sauce for serving

Instructions

  1. Rinse sushi rice under cold water until water runs clear.
  2. Combine rice and water in a pot. Bring to a boil, then reduce heat and cover for 20 minutes.
  3. In a small saucepan, heat rice vinegar, sugar, and salt until dissolved. Mix into cooked rice.
  4. Lay a nori sheet on a bamboo mat.
  5. Spread a thin layer of rice over nori, leaving a 1-inch border at the top.
  6. Place cucumber, avocado, and fish in a line across the rice.
  7. Roll the sushi tightly using the mat, sealing the edge with a little water.
  8. Slice rolls into bite-sized pieces and serve with soy sauce.
