Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound lean ground turkey
  • 1 medium yellow onion, chopped
  • 3 garlic cloves, minced
  • 1 large sweet potato, peeled and diced into ½ -inch cubes
  • 1 (15 oz) can diced tomatoes
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 2 cups low-sodium chicken broth
  • 2 tablespoons tomato paste
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • Salt and pepper, to taste
  • Optional toppings: Avocado, green onions, fresh cilantro, lime wedges
  • Optional add-ins: ½ cup corn kernels, ½ tsp cayenne (for heat), ½ cup cooked quinoa

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook for 3–4 minutes until softened. Stir in the minced garlic and cook for another 30 seconds.
  2. Add the ground turkey to the pot. Cook, breaking it apart with a wooden spoon, until browned and cooked through, about 5–6 minutes. Season with salt and pepper.
  3. Stir in the diced sweet potato, chili powder, cumin, smoked paprika, and dried oregano. Cook for 1–2 minutes, stirring to coat the ingredients with spices.
  4. Stir in the tomato paste, diced tomatoes (with their juice), drained and rinsed black beans, drained and rinsed kidney beans, and low-sodium chicken broth. Mix everything well.
  5. Bring the chili to a boil, then reduce the heat to low. Simmer uncovered for 25–30 minutes, or until the sweet potatoes are tender and the chili has thickened.
  6. Adjust seasoning as needed. Let the chili rest for 5 minutes before serving.
  7. Serve warm, garnished with your favorite optional toppings.
  8. For the Crockpot Method: Brown the turkey with onion and garlic on the stovetop. Transfer to a 6-quart crockpot along with the remaining ingredients. Cook on low for 6–8 hours or on high for 3–4 hours, until the sweet potatoes are fork-tender.

Notes

  • Cut sweet potatoes evenly for consistent cooking.
  • Add extra broth if the chili becomes too thick.
  • Use fire-roasted diced tomatoes for a deeper, smoky flavor.
  • Add cayenne pepper or chopped jalapeños for a spicier chili.
  • Leftovers can be frozen for up to 3 months.
