Ingredients

  • 1 whole chicken (45 lbs)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp garlic powder
  • 1 onion, quartered
  • 2 carrots, chopped
  • 2 celery stalks, chopped

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Pat the chicken dry with paper towels.
  3. Rub olive oil over the chicken.
  4. Mix salt, pepper, thyme, rosemary, and garlic powder, then rub over the chicken.
  5. Place onion, carrots, and celery in the roasting pan.
  6. Put the chicken on top of the vegetables.
  7. Roast for 1.5 hours or until internal temperature reaches 165°F (74°C).
  8. Let rest for 10 minutes before carving.
