Ingredients
Scale
16 oz Cream Cheese (softened)
1 cup Granulated Sugar (can substitute with brown sugar)
1 cup All-Purpose Flour (gluten-free flour could work)
1 tbsp Vanilla Extract (pure vanilla recommended)
1 tsp Ground Cinnamon (nutmeg can be substituted)
1 cup Heavy Whipping Cream (can replace with whipped topping)
1 store-bought Pumpkin Pie (homemade option available)
1/2 cup Unsalted Butter (for frosting)
3 cups Powdered Sugar
1/2 cup Heavy Whipping Cream (for frosting, can replace with milk)
Instructions
Preheat your oven to 350°F (175°C). Beat softened cream cheese until smooth. Gradually add granulated sugar, all-purpose flour, vanilla extract, ground cinnamon, and heavy whipping cream. Incorporate eggs one by one. Pour into a greased springform pan and bake for 10 minutes. Reduce temperature to 200°F (93°C) and bake for 30-35 minutes. Cool and refrigerate overnight.
Prepare your baking pan by greasing and lining it with parchment paper. Mix together flour, baking powder, and ground spices in a medium bowl. In a large bowl, beat softened butter and brown sugar until creamy. Add vegetable oil, eggs, and vanilla extract. Gradually combine dry ingredients with wet, alternating with milk. Pour batter into the prepared pan and bake at 350°F (175°C) for 15-17 minutes. Let cool and refrigerate overnight.
In a clean bowl, beat unsalted butter until fluffy. Gradually add powdered sugar. Mix in ground cinnamon, then blend in vanilla extract and heavy whipping cream until spreadable. Keep covered until ready to assemble.
Trim the edges of the cheesecake and spice cake. On a serving plate, stack the cheesecake layer, followed by the spice cake layer, and top with the chilled pumpkin pie. Use buttercream frosting to fill gaps and frost top and sides. Chill for 20-30 minutes, smooth final layer of frosting, and sprinkle with cinnamon before serving.
Notes
Ensure all ingredients are at room temperature for best mixing.
Customize frosting flavors with additional spices if desired.
Allow ample time for chilling layers before assembly.
