Toffee Shortbread Cookies combine buttery shortbread with crunchy toffee bits.

Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour
  • 1/2 cup cornstarch
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup toffee bits

Instructions

  1. Preheat to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Beat the softened butter and powdered sugar together until light, soft, and fluffy.
  3. Sift flour, cornstarch, and salt. Add gradually to the butter mixture and mix until just combined.
  4. Gently incorporate toffee bits throughout the dough.
  5. Roll dough on a floured surface to 1/4-inch thickness and cut with cookie cutters, or form a log, chill, and slice into rounds.
  6. Place cookies on baking sheet and bake 12–15 minutes, or until edges are lightly golden.
  7. Cool on the sheet for several minutes, then transfer to a rack to cool fully.
