½ cup Pepper Jack Cheese (Use mozzarella for milder flavor)
1 teaspoon Garlic Powder
1 teaspoon Onion Powder
1 teaspoon Smoked Paprika (Regular paprika works too)

Instructions
Prepare fresh corn by cutting kernels off the cob or drain and rinse canned corn. Set aside.
In a bowl, combine sour cream, mayonnaise, and softened cream cheese until smooth.
Fold in cheddar and pepper jack cheeses, then add garlic powder, onion powder, smoked paprika, chili powder, salt, and pepper. Mix well.
Gently fold in corn, green onions, diced red bell pepper, and jalapeño.
Cover and refrigerate for at least 30 minutes or preheat oven to 375°F.
