Roll out the dough to 1/4-inch thickness on a floured surface. Cut shapes with festive cookie cutters and transfer to prepared baking sheets.
Chill the baking sheets with cut cookies in the refrigerator for 10-15 minutes.
Bake cookies in the oven for 10-12 minutes or until edges are lightly golden.
Allow cookies to cool completely on a wire rack before decorating.
Whisk together 6 tbsp meringue powder, 2 tsp lemon juice, and 8 tbsp water, then gradually add 7 cups powdered sugar until glossy.
Divide icing into bowls, add gel colors, and decorate cookies with piping bags or spatulas. Use optional toppings.
