A fun and romantic sushi dish perfect for Valentine’s Day.

Ingredients

  • 2 cups sushi rice
  • 2 1/2 cups water
  • 1/2 cup rice vinegar
  • 1/4 cup sugar
  • 1 teaspoon salt
  • 4 sheets of nori
  • 1 cucumber, julienned
  • 1 avocado, sliced
  • 8 oz crab meat
  • Soy sauce for serving

Instructions

  1. Rinse sushi rice under cold water until water runs clear.
  2. Combine rice and water in a rice cooker. Cook according to instructions.
  3. In a saucepan, heat rice vinegar, sugar, and salt until dissolved.
  4. Once rice is cooked, mix in vinegar mixture. Let cool.
  5. Lay a sheet of nori on a bamboo mat.
  6. Spread a layer of rice on the nori, leaving a small border.
  7. Add cucumber, avocado, and crab meat in the center.
  8. Roll tightly using the bamboo mat.
  9. Slice rolls into bite-sized pieces.
  10. Serve with soy sauce.
