Easy Vegan Breakfast Sausage Patties are a plant-based, high-protein alternative to traditional sausage, made with Textured Vegetable Protein (TVP). These savory, customizable patties are perfect for meal prep, quick breakfasts, and any occasion where you want a delicious, healthy, meat-free option.

Ingredients

  • 1 cup Textured Vegetable Protein (TVP)
  • 1 cup vegetable broth (or water)
  • 1/4 cup breadcrumbs
  • 1 tablespoon flax meal (or ground chia seeds for a substitute)
  • 1 tablespoon soy sauce or tamari (for gluten-free)
  • 1 tablespoon maple syrup
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon ground sage
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil (for cooking)

Instructions

  1. Place the TVP in a large bowl. Pour the hot vegetable broth over it, stir, and let it sit for 5–10 minutes to hydrate.
  2. Add breadcrumbs, flax meal, soy sauce, maple syrup, garlic powder, onion powder, smoked paprika, sage, and black pepper. Stir until well combined.
  3. Shape the mixture into 6-8 patties and press them firmly to hold together.
  4. Heat olive oil in a frying pan over medium heat. Cook patties for 4–5 minutes on each side until golden and crispy.
  5. Remove from pan and place on paper towels to absorb excess oil. Serve immediately or store for later use.
