  • 1 cup sushi rice
  • 1 1/4 cups water
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 4 sheets nori
  • 1 cucumber, julienned
  • 1 carrot, julienned
  • 1 avocado, sliced
  • 1 tbsp sesame seeds

Instructions

  1. Rinse sushi rice under cold water until water runs clear.
  2. Cook rice with water in a rice cooker or pot until tender.
  3. Mix rice vinegar, sugar, and salt in a small bowl.
  4. Fold vinegar mixture into cooked rice and let cool to room temperature.
  5. Place a sheet of nori on a bamboo mat, shiny side down.
  6. With slightly wet hands, spread about 3/4 cup of rice evenly over the nori, leaving a 1-inch border at the top.
  7. Arrange julienned cucumber, carrot, and sliced avocado in a line across the center of the rice.
  8. Lift the edge of the mat closest to you, tuck it over the fillings, and roll away from yourself, applying gentle pressure.
  9. Wet the bare nori edge slightly to seal the roll.
  10. Using a sharp, wet knife, slice each roll in half, then slice each half into 4-6 pieces.
  11. Sprinkle with sesame seeds and serve immediately.
