1 onion, chopped
2 cloves garlic, minced
4 cups chicken broth
1 can diced tomatoes
1 tsp Italian seasoning
8 oz lasagna noodles, broken into pieces
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/2 cup heavy cream
Salt and pepper to taste
Fresh basil, for garnish
Instructions
Sauté chopped onion over medium heat until softened (5-7 min). Add minced garlic and cook for 1 minute until fragrant.
Stir in chicken broth, diced tomatoes, and Italian seasoning. Bring the mixture to a gentle simmer.
Add the broken lasagna noodles and cooked, shredded chicken to the simmering soup. Cook for 10-12 minutes, stirring occasionally, until noodles are tender.
Reduce heat to low. Stir in heavy cream, shredded mozzarella, and grated Parmesan cheese until melted and smooth.
