  • 2 cups cooked shredded chicken
  • 1/2 cup barbecue sauce
  • 2 cups shredded cheddar cheese
  • 4 large flour tortillas
  • 1/4 cup chopped green onions (optional)
  • 2 tablespoons olive oil

Instructions

  1. In a skillet, heat 1 tablespoon olive oil over medium heat. Add the 2 cups cooked shredded chicken and 1/2 cup barbecue sauce. Stir until the chicken is well coated and heated through.
  2. Lay one large flour tortilla flat. On one half of the tortilla, sprinkle about 1/4 cup shredded cheddar cheese. Evenly spoon about 1/2 cup of the BBQ chicken filling over the cheese, then sprinkle with another 1/4 cup shredded cheddar cheese. If desired, add chopped green onions. Fold the empty half of the tortilla over the filled half to form a half-moon shape.
  3. Heat the remaining 1 tablespoon olive oil in a large non-stick skillet or griddle over medium heat. Carefully place 1-2 assembled quesadillas in the pan (without overcrowding). Cook for 3-5 minutes per side, until the tortilla is golden brown and crispy, and the cheese inside is fully melted and bubbly. Repeat with the remaining quesadillas, adding more oil if needed.
  4. Immediately transfer cooked quesadillas to a cutting board. Carefully slice each quesadilla into wedges. Serve warm with your favorite optional toppings, such as extra BBQ sauce or sour cream.
