Blueberry Cream Cheese Bread is a moist, delicious quick bread with fresh blueberries and a creamy cream cheese filling. Perfect for brunch or dessert.

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted butter, softened
  • 1 cup fresh blueberries
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1 large egg

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Beat cream cheese, sugar, vanilla extract, and egg until smooth. Set aside.
  3. Combine flour, baking powder, baking soda, and salt in a bowl. In another bowl, mix sugar, eggs, milk, vanilla, and butter. Add wet ingredients to dry ingredients, stir until combined, and fold in blueberries.
  4. Pour half of the batter into the prepared pan, add cream cheese filling, then top with the remaining batter.
  5. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean. Cool before slicing.
