A festive and delicious Christmas roll cake filled with sweet cream and topped with chocolate.

  • 1/2 cup granulated sugar
  • 3 large eggs
  • 1/4 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Chocolate shavings for decoration

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 15×10-inch jelly roll pan.
  3. In a bowl, mix flour, cocoa powder, baking powder, and salt.
  4. In another bowl, beat eggs and granulated sugar until thick.
  5. Fold in the dry ingredients gently.
  6. Spread the batter evenly in the prepared pan.
  7. Bake for 12-15 minutes until the cake springs back.
  8. Remove from oven and let cool for a few minutes.
  9. Turn the cake onto a clean kitchen towel dusted with powdered sugar.
  10. Roll the cake with the towel and let it cool completely.
  11. Whip heavy cream, powdered sugar, and vanilla until stiff peaks form.
  12. Unroll the cake and spread the cream filling.
  13. Roll the cake back up without the towel.
  14. Chill for at least 1 hour before serving.
  15. Decorate with chocolate shavings before serving.
