8 oz Goat cheese – softened
4 oz Cream cheese – softened
1/2 cup Dried cranberries – finely chopped
1/2 cup Chopped pecans – toasted
2 tbsp Fresh rosemary or parsley – finely chopped
1–2 tbsp Honey (optional)
Salt and black pepper – to taste
Instructions
In a large bowl, combine softened goat cheese and cream cheese until fully smooth.
Stir in half of the chopped cranberries and some chopped pecans.
Refrigerate the mixture for 15–20 minutes to firm it up for rolling.
Use a small scoop or spoon to shape the mixture into mini truffles.
Mix remaining cranberries, pecans, and fresh herbs in a shallow dish. Roll each cheese ball to coat evenly.
Place on a platter with toothpicks or refrigerate until serving time.
Notes
These truffles can be made in advance and stored in the refrigerator.
