  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon gochujang (Korean chili paste)
  • 1 tablespoon honey or brown sugar
  • 1 teaspoon garlic (minced)
  • 1 teaspoon grated ginger
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame seeds (for garnish)
  • 1 tablespoon green onions (sliced for garnish)
  • For a vegan option, swap honey for maple syrup or agave syrup.
  • Gochujang can be substituted with chili paste mixed with soy sauce for a milder heat.
  • Sesame oil adds a rich, nutty flavor but olive oil can be used as a substitute.

Instructions

  1. Wash the potatoes and cut them into small cubes or wedges. Toss them in 1 tablespoon of vegetable oil and season with salt.
  2. Preheat the oven to 425°F (220°C). Spread the potatoes in a single layer on a baking sheet and roast for 25–30 minutes, flipping halfway through until golden and crispy.
  3. In a saucepan, combine soy sauce, sesame oil, gochujang, honey, garlic, ginger, and rice vinegar. Stir over medium heat until the sauce is warm and the sugar dissolves. Simmer for 2–3 minutes.
  4. Once the potatoes are roasted, transfer them to a bowl and pour the warm sauce over them. Toss gently to coat the potatoes evenly.
  5. Sprinkle sesame seeds and sliced green onions on top for garnish. Serve hot as a side dish or snack.
