1 lb lean ground beef
1 cup white or brown rice
1 can black beans (or pinto/kidney beans)
1 bell pepper, diced
1 onion, diced
1 cup corn
1 cup salsa (fresh or jarred)
1 cup shredded cheddar or Monterey Jack cheese
1 avocado, diced or 1/2 cup guacamole
1 tsp cumin
1 tsp chili powder
1 tsp garlic powder
Salt to taste
Instructions
Cook the rice according to package instructions. If using brown rice, remember it may take longer to cook.
In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it up with a spatula as it cooks, about 5-7 minutes.
Once the beef is cooked, add diced onions and bell peppers to the skillet. Sauté for about 3-4 minutes until they soften.
Sprinkle in cumin, chili powder, garlic powder, and salt. Stir well and let it cook for another 2 minutes to meld the flavors.
Drain and rinse your beans, then add them to the skillet. Stir to combine and heat through, about 2-3 minutes.
In individual serving bowls, layer cooked rice, the beef and bean mixture, and your choice of toppings like salsa, cheese, avocado, and any additional veggies.
