Ingredients
Scale
1 cup jasmine rice (or any long-grain white rice)
1 1/2 cups water or coconut milk (for extra flavor)
1 tablespoon sesame oil or vegetable oil
1/2 cup diced pineapple (fresh or canned)
1/4 cup diced red bell pepper
1/4 cup green onions (chopped)
1/4 cup diced carrots (optional for added crunch)
2 tablespoons soy sauce (or tamari for gluten-free)
1 tablespoon brown sugar (optional, for extra sweetness)
1/4 teaspoon ground black pepper
1/4 cup shredded coconut (optional, for extra tropical flavor)
Instructions
In a medium saucepan, combine the rice and water (or coconut milk). Bring it to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the rice is tender and the liquid is absorbed. Remove from heat and fluff with a fork.
In a large skillet, heat the sesame oil over medium heat. Add the diced red bell pepper, carrots (if using), and chopped green onions. Sauté for 3-4 minutes until the vegetables are softened but still vibrant.
Add the cooked rice to the skillet, along with the diced pineapple. Stir well to combine. Pour in the soy sauce, brown sugar (if using), and ground black pepper. Stir to combine, ensuring the rice is evenly coated with the sauce.
Optional: Stir in shredded coconut for extra texture and tropical flavor. Cook for another 2-3 minutes to heat everything through.
Serve your Hawaiian Pineapple Rice as a side dish with your favorite Aloha Pineapple Chicken Rice Casserole or grilled meats. Garnish with extra green onions, pineapple slices, or even toasted coconut for a fun, festive touch.
Notes
Perfect for BBQs, luau parties, or a weeknight dinner.
Can be adjusted for sweetness by adding or omitting brown sugar.
