Honey Pepper Chicken Mac And Cheese combines classic macaroni and cheese with sweet and spicy chicken.

  • 2 cups elbow macaroni
  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 cup heavy cream
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup parmesan cheese, grated
  • 1/4 cup honey
  • 2 tsp black pepper, freshly ground
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • Salt, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cut chicken breast into bite-sized pieces. In a bowl, combine chicken with olive oil, minced garlic, black pepper, and salt to taste. Toss to coat well. Marinate for at least 30 minutes in the refrigerator.
  2. Heat a large skillet over medium-high heat. Cook marinated chicken pieces until browned and cooked through, about 6-8 minutes. Transfer chicken to a clean plate and set aside.
  3. Return cooked chicken to the skillet. Add honey and toss gently until every piece of chicken is coated in the glaze. Remove from heat.
  4. Bring a large pot of salted water to a boil. Add elbow macaroni and cook according to package directions until al dente. Drain thoroughly and do not rinse.
  5. In a large pot, melt butter over medium heat. Gradually whisk in heavy cream. Reduce heat to low, then slowly add cheddar, mozzarella, and parmesan cheese, stirring until melted into a smooth sauce. Season with salt to taste.
  6. Preheat oven to 375°F (190°C). Lightly grease a baking dish. Add the drained pasta to the cheese sauce and fold until coated. Spoon half of the mac and cheese into the dish. Arrange honey pepper chicken over this layer. Spoon remaining mac and cheese over the chicken. Bake for 25-30 minutes or until bubbly.
  7. Remove from oven and let rest for 5-10 minutes before serving. Garnish with fresh parsley and black pepper. Serve warm.
