These Jalapeno Popper Cheesy Chicken Enchiladas are a spicy and creamy delight that combines the beloved flavors of jalapeno poppers with cheesy chicken enchiladas. Perfect for family dinners or gatherings, they are sure to impress with their bold flavors and comforting textures.

  • 2 cups Shredded Chicken
  • 2 Fresh jalapenos
  • 8 oz Cream Cheese
  • 1 cup Cheddar Cheese
  • 10 Corn tortillas or flour tortillas
  • 2 cups Enchilada Sauce

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine shredded chicken, chopped jalapenos (remove seeds for less heat), softened cream cheese, and half of your cheddar cheese. Mix until everything is well incorporated.
  3. Take a tortilla, add a generous scoop of the chicken mixture, and roll it up tightly. Place it seam-side down in a greased baking dish. Repeat with remaining tortillas and filling.
  4. Pour your enchilada sauce evenly over the rolled tortillas, ensuring they are well covered. Sprinkle the remaining cheddar cheese on top.
  5. Cover the dish with aluminum foil and bake for about 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  6. Once out of the oven, let the enchiladas cool for a few minutes. Top with chopped green onions or cilantro and serve with your favorite sides like sour cream or guacamole.
