Ingredients

  • Thyme
  • Bay leaves

  • Non-alcoholic red wine (or grape juice)
  • Salt
  • Pepper
  • Oil for searing

Instructions

  1. Preheat the oven to 160°C (320°F).
  2. Cut the beef into large chunks (about 2-3 inches) and season generously with salt and pepper.
  3. In a large, oven-safe pot or Dutch oven, heat some oil over medium-high heat. Add the beef chunks in batches, searing them on all sides until browned, about 5-7 minutes per batch. Remove the beef and set it aside.
  4. In the same pot, add chopped onions and sauté until they become translucent. Then, add minced garlic and cook for an additional minute until fragrant.
  5. Return the beef to the pot. Add chopped carrots, potatoes, tomato paste, herbs, and your choice of broth and non-alcoholic wine or grape juice. Stir everything together until well combined.
  6. Cover the pot with a tight-fitting lid and place it in the preheated oven. Bake for about 2.5 to 3 hours, or until the beef is fork-tender.
  7. Once done, remove the pot from the oven. Taste the sauce and adjust the seasoning with more salt, pepper, or fresh herbs if desired.
