  • 1 lb (450 g) boneless skinless chicken breasts, diced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon dried oregano
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1 cup (170 g) uncooked quinoa, rinsed
  • 2 cups (480 ml) low-sodium chicken broth
  • ½ cup (75 g) cherry tomatoes, halved
  • ½ cup (50 g) crumbled feta cheese
  • 2 tablespoons chopped fresh parsley
  • Optional: baby spinach or diced cucumber

Instructions

  1. Toss diced chicken with olive oil, garlic powder, oregano, paprika, salt, pepper, lemon zest, and lemon juice. Let marinate briefly.
  2. Bring chicken broth to a boil in a saucepan. Stir in rinsed quinoa, reduce heat, cover, and simmer for 12–15 minutes until liquid is absorbed. Fluff with a fork.
  3. Heat a large skillet over medium heat. Add marinated chicken and cook for 6–8 minutes until fully cooked and lightly golden.
  4. Add cooked quinoa to the skillet. Stir in cherry tomatoes and cook for 1–2 minutes.
  5. Remove from heat and sprinkle feta cheese and parsley over the top. Serve warm.
