1 pizza dough (store-bought or homemade)
2 large potatoes, peeled and thinly sliced
1/2 cup sour cream
1 cup shredded mozzarella cheese
1/2 cup shredded cheddar cheese
1/4 cup cooked bacon (crumbled, or use a vegetarian substitute)
2 tablespoons olive oil
1/4 teaspoon garlic powder
Salt and pepper, to taste
Fresh chives or green onions, chopped for garnish
Instructions
Preheat your oven to 475°F (245°C). Brush a pizza stone or baking sheet with olive oil and stretch or roll the dough out into your desired shape.
Toss the thinly sliced potatoes with olive oil, garlic powder, salt, and pepper. Bake the potato slices in the oven for about 10-12 minutes until slightly softened.
Spread a thin layer of sour cream over the pizza dough. Sprinkle shredded mozzarella and cheddar cheese, then layer the pre-baked potato slices on top.
Add crumbled bacon or vegetarian substitute on top.
Bake for 12-15 minutes, or until the cheese is melted and bubbly, and the crust is golden brown.
Sprinkle with freshly chopped chives or green onions, slice, and serve!
