- 2 cups mixed olives (green, black, Kalamata)
- 3 tablespoons extra virgin olive oil
- Zest of 1 lemon
- Zest of 1 orange
- 1 tablespoon lemon juice
- 3 garlic cloves, thinly sliced
- 1 teaspoon chili flakes (adjust to taste)
- 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
- 1 tablespoon fresh thyme (or 1 teaspoon dried)
- 1 teaspoon whole black peppercorns
- ½ teaspoon fennel seeds (optional)
- 1 bay leaf
- Salt, to taste
- Warm olive oil in a small saucepan over low heat.
- Add garlic and cook gently for 1–2 minutes until fragrant, not browned.
- Stir in citrus zest, chili flakes, rosemary, thyme, bay leaf, peppercorns, and fennel seeds.
- Cook for 2–3 minutes to gently infuse flavors.
- Place olives in a bowl and pour warm oil mixture over them.
- Add lemon juice and a pinch of salt, then toss to combine.
- Transfer to an airtight container and refrigerate for at least 12 hours.
- Bring to room temperature before serving.
