Irresistibly Delicious Marinated Olives

Ingredients

  • 2 cups mixed olives (green, black, Kalamata)
  • 3 tablespoons extra virgin olive oil
  • Zest of 1 lemon
  • Zest of 1 orange
  • 1 tablespoon lemon juice
  • 3 garlic cloves, thinly sliced
  • 1 teaspoon chili flakes (adjust to taste)
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
  • 1 tablespoon fresh thyme (or 1 teaspoon dried)
  • 1 teaspoon whole black peppercorns
  • ½ teaspoon fennel seeds (optional)
  • 1 bay leaf
  • Salt, to taste

Instructions

  1. Warm olive oil in a small saucepan over low heat.
  2. Add garlic and cook gently for 1–2 minutes until fragrant, not browned.
  3. Stir in citrus zest, chili flakes, rosemary, thyme, bay leaf, peppercorns, and fennel seeds.
  4. Cook for 2–3 minutes to gently infuse flavors.
  5. Place olives in a bowl and pour warm oil mixture over them.
  6. Add lemon juice and a pinch of salt, then toss to combine.
  7. Transfer to an airtight container and refrigerate for at least 12 hours.
  8. Bring to room temperature before serving.

Notes

  • These olives are great for charcuterie boards.
  • Adjust chili flakes to your spice preference.
  • They improve in flavor the longer they marinate.
