Savory Mediterranean Chicken Meatballs infused with sun-dried tomatoes and creamy feta, perfect for quick weeknight meals.

  • 1 lb Ground Chicken
  • 1/2 cup Breadcrumbs
  • 1/4 cup Fresh Parsley
  • 2 cloves Garlic
  • 1/2 cup Feta Cheese
  • 1/2 cup Sun-dried Tomatoes
  • 1 tsp Dried Oregano
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 large Egg
  • 2 tbsp Olive Oil
  • 2 tbsp Lemon Juice

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine ground chicken, breadcrumbs, parsley, garlic, feta, sun-dried tomatoes, oregano, salt, and pepper.
  3. In a small bowl, beat the egg until smooth and fold it into the chicken mixture.
  4. Roll the mixture into small meatballs, about 1 inch in diameter.
  5. Heat olive oil in a skillet over medium-high heat, and sear the meatballs until golden brown, about 5 minutes.
  6. Transfer the browned meatballs to a baking sheet lined with parchment paper.
  7. Bake in the preheated oven for 10-12 minutes or until they reach an internal temperature of 165°F (74°C).
  8. Remove from oven and squeeze fresh lemon juice over the hot meatballs before serving.

Notes

  • Use gluten-free breadcrumbs for a lighter version.
  • Substitute fresh parsley with cilantro if desired.
  • Adjust moisture if using fresh sun-dried tomatoes.
  • Goat cheese can replace feta cheese.
