  • 1 cup Granulated sugar
  • 1/4 cup Light corn syrup
  • 1 teaspoon Vanilla extract
  • Chopped nuts (optional)
  • Chocolate (optional)

Instructions

  1. Prepare your baking sheet: Line a baking sheet with parchment paper or a silicone mat to prevent sticking.
  2. Melt the butter: In a medium saucepan over medium heat, melt the unsalted butter. Stir occasionally to prevent it from burning.
  3. Add sugar and corn syrup: Once the butter is fully melted, add the granulated sugar and light corn syrup. Stir until combined.
  4. Cook the mixture: Increase the heat to medium-high and bring the mixture to a boil. Use a candy thermometer to monitor the temperature. Stir constantly until it reaches 300°F (hard crack stage).
  5. Remove from heat: As soon as it reaches the correct temperature, remove the pot from the heat and stir in the vanilla extract. Be careful, as the mixture will bubble up!
  6. Pour onto the baking sheet: Quickly pour the hot toffee onto your prepared baking sheet, spreading it evenly with a spatula. If using nuts, sprinkle them on top while the toffee is still hot.
  7. Let it cool: Allow the toffee to cool completely at room temperature. This should take about an hour.
  8. Chocolate drizzle (optional): If you want to add chocolate, melt your chosen chocolate in a microwave-safe bowl in 30-second intervals, stirring in between until smooth. Drizzle it over the cooled toffee.
  9. Break into pieces: Once the chocolate has set, break the toffee into pieces and enjoy!
