1½ pounds ground beef (85/15 recommended)
1 cup salsa (mild or medium)
1 cup crushed tortilla chips or breadcrumbs
2 large eggs
1 small onion, finely diced
1 bell pepper, finely chopped
2 cloves garlic, minced
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup shredded cheese (optional)
Extra salsa, for topping
Instructions
Preheat oven to 375°F (190°C). Grease a loaf pan or line with parchment paper.
In a large bowl, combine ground beef, crushed tortilla chips, eggs, salsa, onion, bell pepper, garlic, chili powder, cumin, smoked paprika, salt, and black pepper. Mix gently until just combined.
Transfer mixture to the prepared loaf pan and gently press into shape.
Spread a thin layer of salsa over the top for added moisture and flavor.
Bake uncovered for 50–60 minutes, until the internal temperature reaches 160°F (71°C).
Remove from oven and let rest for 10 minutes before slicing.
