  • 0.5 cup unsalted butter
  • 0.75 cup granulated sugar
  • 0.5 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 0.5 cup buttermilk
  • 1 cup grated apples
  • 0.5 cup softened butter
  • 4 cups powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large mixing bowl, whisk together flour, baking powder, baking soda, salt, and ground cinnamon.
  3. In a separate bowl, cream softened butter with granulated and brown sugars until light and fluffy, about 2-3 minutes.
  4. Add the eggs one at a time, mixing well after each addition and then stir in vanilla extract.
  5. Gradually alternate adding the dry mixture and buttermilk to the butter mixture, mixing until combined.
  6. Fold in grated apples until just incorporated.
  7. Fill each cupcake liner about two-thirds full and bake for 18-20 minutes.
  8. Once baked, allow cupcakes to cool in the pan for 5 minutes before transferring them to a wire rack.
  9. For frosting, whip softened butter until creamy, mix in powdered sugar, cinnamon, milk, and vanilla extract until fluffy.
  10. Frost each cupcake and serve.
